INGREDIENTS

130 g Whole wheat flour

20 g All purpose Flour

280 g Sourdough Discard

60 g Salted Butter
-
45 g Brown Sugar
DIRECTIONS
- Combine all the above ingredients and knead till everything is incorporated
- Divide the dough into two parts, make a rectangle shaped dough, cover it with plastic wrap and let it rest overnight
- Following day, pre-heat the oven at 200 C, remove the dough from the fridge
- Roll it into a 13 inch by 9 inch rectangle approximately. Spread a very thin layer of softened butter and sprinkle cinnamon sugar
- Cut them in squares using a pizza cutter or knife
- Bake for around 30 – 40 mins depending upon your oven and cracker thicknesses
NOTES
- The brown sugar in the dough gives a very lightly sweet flavour to the cracker, rest of the sweetness comes from the cinnamon sugar on top
- Do not over – knead the dough

- Rotate the tray halfway through the bake
- To make cinnamon sugar, mix equal quantities of cinnamon powder and brown sugar
