Cinnamon Sugar Discard Crackers

INGREDIENTS

  • 130 g Whole wheat flour

  • 20 g All purpose Flour

  • 280 g Sourdough Discard

  • 60 g Salted Butter

  • 45 g Brown Sugar

DIRECTIONS

  • Combine all the above ingredients and knead till everything is incorporated
  • Divide the dough into two parts, make a rectangle shaped dough, cover it with plastic wrap and let it rest overnight
  • Following day, pre-heat the oven at 200 C, remove the dough from the fridge
  • Roll it into a 13 inch by 9 inch rectangle approximately. Spread a very thin layer of softened butter and sprinkle cinnamon sugar
  • Cut them in squares using a pizza cutter or knife
  • Bake for around 30 – 40 mins depending upon your oven and cracker thicknesses

NOTES

  • The brown sugar in the dough gives a very lightly sweet flavour to the cracker, rest of the sweetness comes from the cinnamon sugar on top
  • Do not over – knead the dough

  • Rotate the tray halfway through the bake
  • To make cinnamon sugar, mix equal quantities of cinnamon powder and brown sugar
